My avocado seed has sprouted three shoots, do I leave them to grow together or cut off two shoots?

Are avocado seeds like mango seeds which have many embryos?

, Avocado seeds can be polyembryonic. It would be best to plant the seed as is because a polyembryonic seed will reflect the parent and you can be assurred that it will produce fruit. The variety Kensington Pride is polyembryonic and is propagated from seed in Australia.
