Every year my nectarine tree gets infested with beetles that destroy the whole crop. What prevents this?

Net your tree or fruit using exclusion netting/bags, and pick up any fallen fruit and dispose of it in the bin.

Controlling fruit fly to reduce fruit drop can also help manage this problem, as the beetles infect fallen fruit as well as ripening fruit on the tree:
