Is there anyway to stop plants from going to seed once they start? Or once they start is that it?

Answer: Hi Kathryn,
Herbs such as parsley and coriander can go to seed quickly and therefore frequent cutting is required even if you do not need the herbs that day. Annual plants such as some herbs and vegetables will only last one season and must be replanted each season or year.
