I was wondering if I could add hydrated lime instead of garden/dolomite lime to my soil?

Answer: Garden lime – calcium carbonate, dolomite – calcium magnesium carbonate and builders lime (Hydrated Lime) – calcium hydroxide are all forms of lime but their basic difference is how reactive they are. To raise the pH of the soil in a vegie patch, dolomite or garden lime is recommended as it is less likely to burn than the more reactive hydrated lime.
