Stuffed Tomatoes

Stuffed Tomatoes

Use large beefy tomatoes for stuffing. They can be served as an entree, or as a vegetable side dish. Serves 4

Ingredients:

4 large ripe tomatoes
1 tsp salt

Stuffing:
1 Tbsp olive oil
1 tsp unsalted butter
1 large onion, peeled and diced
2 Tbsp black olives, pitted and chopped
2 Tbsp parsley, finely chopped
1 cup fresh breadcrumbs
4 Tbsp grated cheese
Freshly ground black pepper
Olive oil (for baking)


  1. Slice off the tops of the tomatoes and scoop out the juice, seeds and core.
  2. Sprinkle salt inside the tomato shells and turn upside down to drain for 30 minutes.
  3. To make the stuffing in the meantime, heat the oil and butter in a frying pan. Add the diced onion and cook gently until translucent.
  4. Add the olives and parsley and cook for a minute or two.
  5. Add the breadcrumbs and cook until they change colour.
  6. Add the cheese and stir into the mixture until it melts.
  7. Remove from the heat and fill each tomato shell.
  8. Add pepper to each.
  9. Put the tomato halves in an oven dish, add a little oil to the dish, and bake at 180°C for 12- 15 minutes until the tomatoes are cooked.

    This sounds lovely, I'm sure my grandchildren would like it so I will make same next time I am baby sitting. I suppose you could also stuff the mixture into a red capsicum!

    I'd add (or substitute) sliced mushrooms for the olives, reduce the amount of onion and add 2 teaspoons of fresh oregano

    i will be trying this for dinner tonight, they will tart up the humble sausages, but will add a hint of garlic and use parmesan cheese instead

    Sounds great will try it soon. Agree with the mushrooms and garlic. Would substitute the oregano for thyme and garnish with parsley.

    This recipe sounds nice. I make a similar one but don't bake the tomatoes. My recipe: 4 ripe tomatoes - 1 cup of cooked arborio rice - 1 tin of red salmon, tuna or anchovies - parseley - lemon juice - black pepper - 1 tablespoon tartare sauce (to join ingrdients) Prepare tomatoes as the above recipe. Fill the tomatoes with the mixture, garnish wit tartare sauce or mayo and a stuffed green olive. Serve with a mixed salad garnish with lemon wedges. I don't bake the tomatoes.

    i do mine with diced ham or bacon mixed herbs and a egg broken on the top with cheese and baked

    All the above ideas sound good ,I would use the olives as they are yummy. Asuncion reciepe I will try sounds great, Zucchini's stuffed with those ingredients would be nice as well

    It sounds very nice i have had stuffed Tomatoes before & Capsicum and even Stuffed Zucchini and i liked them all i am in the Process of doing my Black Olives in Brine
