Parsnip Soup

Curry spices bring out a deeper, richer flavour in parsnips, and this soup will warm the coldest winter day.

Ingredients:

Method:

  1. Melt the butter in a heavy-based saucepan, add the spices and cook gently without letting the butter brown, until the spices have released their flavours.
  2. Meanwhile, peel and dice the parsnips. Add to the spicy butter and cook for a minute or two.
  3. Add the stock, milk, salt and pepper and simmer, covered, for 15-20 minutes or until the diced parsnips are tender.
  4. Use a blender, food processor or mouli to process the soup to a smooth thickness. Work in batches if necessary.
  5. Taste and adjust seasoning if necessary and return to the saucepan to reheat.
  6. Serve in individual bowls garnished with a drop of Tabasco sauce and the chopped chives.

    Yes, it sounds great, but I'm on a weight loosing diet and definitely don't eat butter. What a shame!

    On a weight loosing diet, would it not be possible to have a light oil instead of butter, and maybe some water, in which to start preparing the basic items that were to be done in butter? After all, such a soup sounds like a weight watchers special to me, now almost a diabetic, who has been told to check everything I eat to prevent thing getting worse.

    So Yumm changed couple things to make it , LOW FAT: Butter ; None used ! Milk; Swapped for a tin of, Carnation Light and Creamy Evaporated Milk, Added only when Parsnips cooked & Mashed, only to warm through! Cooked mine in slow cooker, to bring out best flavours, Fat Grams less than 2 , per serve.

    Can there be any kind of upgrade from the apple iphone 4 to apple iphone five whenever it will come out? I am trying to find out if an apple iphone 4 user should be able to upgrade to the new iphone 5 when it will come out. I've had my apple iphone 4 since september of 2010 and i don't wish to pay $600 for the apple iphone 5 when it comes out this summer.
